Vegan Black bean and Quinoa Chili

Quinoa ChiliĀ 

1/2 Cup quinoa

1 Cup water

1 small onion, chopped

3 cloves garlic, minced

1 jalapeno pepper, diced

1 large carrot, chopped

2 celery stalks, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1 medium zucchini, chopped

2 (15 oz) cans black beans, drained and rinsed

1 (15 oz) can red kidney beans, drained and rinsed

3 (15 oz) cans diced tomatoes

1 (15 oz) can tomato sauce

2-3 tablespoons chili powder

1 tablespoon ground cumiin

salt and pepper to taste

Combined all ingredients in a pot and let simmer for 1 hour.
